Start the year off right with this protein-packed dinner that also includes the best of winter produce! Serve with brown or white rice for a delicious meal that’s ready in about 30 minutes.
Ingredients
- 4 salmon fillets (4–6 oz each)
- 2 cups broccoli florets
- 1 1/2 cups Brussels sprouts, halved
- 2 medium carrots, sliced
- 4 tbsp olive oil
- 3-4 cloves garlic, minced
- Zest and juice of 2 lemons
- Salt and black pepper, to taste
- Pinch of red pepper flakes
Instructions
- Preheat oven to 400 degrees and line a baking sheet with parchment paper or aluminum foil.
- Toss the broccoli, Brussels sprouts and carrots with 2 tablespoons of the oil, salt and pepper until evenly coated.
- Spread evenly on baking sheet in a single layer and roast for 15-20 minutes, stirring halfway through to ensure evening cooking.
- Mix the remaining two tablespoons of oil with garlic, lemon zest and juice.
- Spoon or brush the mixture over the salmon fillets, then add them to the baking sheet with the vegetables. Continue roasting for another 10-12 minutes, or until salmon is easily flaked with a fork.
- Sprinkle with red pepper flakes (optional) and serve immediately.
