Lemon Garlic Salmon with Roasted Vegetables

Start the year off right with this protein-packed dinner that also includes the best of winter produce! Serve with brown or white rice for a delicious meal that’s ready in about 30 minutes.

 

Ingredients

  • 4 salmon fillets (4–6 oz each)
  • 2 cups broccoli florets
  • 1 1/2 cups Brussels sprouts, halved
  • 2 medium carrots, sliced
  • 4 tbsp olive oil
  • 3-4 cloves garlic, minced
  • Zest and juice of 2 lemons
  • Salt and black pepper, to taste
  • Pinch of red pepper flakes

Instructions

  1. Preheat oven to 400 degrees and line a baking sheet with parchment paper or aluminum foil.
  2. Toss the broccoli, Brussels sprouts and carrots with 2 tablespoons of the oil, salt and pepper until evenly coated.
  3. Spread evenly on baking sheet in a single layer and roast for 15-20 minutes, stirring halfway through to ensure evening cooking.
  4. Mix the remaining two tablespoons of oil with garlic, lemon zest and juice.
  5. Spoon or brush the mixture over the salmon fillets, then add them to the baking sheet with the vegetables. Continue roasting for another 10-12 minutes, or until salmon is easily flaked with a fork.
  6. Sprinkle with red pepper flakes (optional) and serve immediately.
