Ingredients

  • 1 pound (about 31-40) large shrimp, peeled & deveined
  • 2/3 cup fresh grapefruit juice (from one large grapefruit)
  • Zest from one large grapefruit (1 – 1 ½ tsp)
  • 1 tablespoon soy sauce or tamari
  • 1 tablespoon honey
  • 1 teaspoon grated ginger
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon toasted sesame oil
  • 2-3 scallions, thinly sliced

Instructions

  1. Whisk the grapefruit juice, zest, soy sauce, honey, ginger, and garlic together in a small saucepan, and bring to a low simmer over medium-high heat. Continue to stir and cook until the liquid is reduced by about half (5–7 minutes). Set aside.
  2. Heat olive oil in a large frying pan over medium high heat. Add shrimp in a single layer, and cook about 2 minutes per side, or until opaque and curled into a tight “c” shape.
  3. Pour glaze over shrimp and cook another minute until glossy.
  4. Remove from heat and drizzle with sesame oil and then top with scallions. Serve immediately.
