This is peak season for grapefruit, so why not try something a little different with this easy recipe that’s versatile and sure to please the entire family! Serve it over rice with a side of broccoli or asparagus for a perfect spring dinner. Or add it to mixture of leafy greens and chopped spring vegetables for a protein packed lunch that will keep you fueled for hours.
Ingredients
- 1 pound (about 31-40) large shrimp, peeled & deveined
- 2/3 cup fresh grapefruit juice (from one large grapefruit)
- Zest from one large grapefruit (1 – 1 ½ tsp)
- 1 tablespoon soy sauce or tamari
- 1 tablespoon honey
- 1 teaspoon grated ginger
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon toasted sesame oil
- 2-3 scallions, thinly sliced
Instructions
- Whisk the grapefruit juice, zest, soy sauce, honey, ginger, and garlic together in a small saucepan, and bring to a low simmer over medium-high heat. Continue to stir and cook until the liquid is reduced by about half (5–7 minutes). Set aside.
- Heat olive oil in a large frying pan over medium high heat. Add shrimp in a single layer, and cook about 2 minutes per side, or until opaque and curled into a tight “c” shape.
- Pour glaze over shrimp and cook another minute until glossy.
- Remove from heat and drizzle with sesame oil and then top with scallions. Serve immediately.
