Try this easy summer side dish to make your dinner healthier and tastier. Switch out vegetables with what you have on hand.
- 1 eggplant
- 1 zucchini
- 1 red onion
- 1 red bell pepper
- 2 portobello mushrooms
- 2 tbsp olive oil
- 2 tbsp feta cheese
- 1 tbsp lemon juice
- 1 tsp garlic powder
- Salt and pepper to taste
- Preheat the grill to 350 degrees.
- Prepare the vegetables by slicing them into equal sizes so they cook evenly. Coat in olive oil and garlic powder. Set aside.
- Grill vegetables for about 3-5 minutes on each side, until thoroughly cooked (note that some vegetables may take longer to cook depending on their size and thickness).
- Sprinkle feta cheese and lemon juice over cooked vegetables. Salt and pepper to taste.
