Grilled Veggies

Try this easy summer side dish to make your dinner healthier and tastier. Switch out vegetables with what you have on hand.



  • 1 eggplant
  • 1 zucchini
  • 1 red onion
  • 1 red bell pepper
  • 2 portobello mushrooms
  • 2 tbsp olive oil
  • 2 tbsp feta cheese
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • Salt and pepper to taste


  1. Preheat the grill to 350 degrees.
  2. Prepare the vegetables by slicing them into equal sizes so they cook evenly. Coat in olive oil and garlic powder. Set aside.
  3. Grill vegetables for about 3-5 minutes on each side, until thoroughly cooked (note that some vegetables may take longer to cook depending on their size and thickness).
  4. Sprinkle feta cheese and lemon juice over cooked vegetables. Salt and pepper to taste.
