No-Bake Oatmeal Bites

These oatmeal bites are the perfect make-ahead snack to pack for school, work, or wherever your busy day takes you. Eat them as a snack, or pack them as part of a bento-style lunch with fruits and veggies.

Ingredients

  • ½ cup old fashioned oats
  • ½ cup quick-cooking oats
  • ¼ cup almond butter
  • ¼ cup honey
  • ½ cup dried blueberries
  • ⅓ cup chocolate chips (optional)
  • ¼ teaspoon cinnamon
  • ½ teaspoon vanilla
  • Dash of salt

Instructions

  1. Mix ingredients together in a bowl, stirring until combined. Mixture should be sticky enough to hold together when squeezed. Refrigerate mixture for thirty minutes to set.
  2. Using a spoon, scoop about a tablespoon of the dough into your hands, rolling into a ball. Repeat with the rest of the mixture.
  3. Cover and store the oatmeal bites in the refrigerator or air-tight container for up to a week (or freeze to save them longer). Recipe makes about 14 oatmeal bites.
