Roasted Salmon with Cucumber Dill Yogurt

Spring into action with this mood-boosting, B12-infused dish!


  • 1 cucumber, peeled
  • ½ cup sour cream
  • 6 oz Greek yogurt
  • 2 tsp. dill
  • 2 cloves garlic
  • ½ tsp. salt
  • 2 tbsp. lemon juice
  • ½ tsp. pepper
  • 8 salmon filets


  1. Preheat oven to 350° F
  2. Shred cucumber (without seeds), pat with paper towel to discard excess water
  3. In a small bowl, stir together cucumber, sour cream, yogurt, dill, ½ the garlic, ½ the lemon juice, salt and pepper
  4. Line a baking sheet with foil. Rinse salmon and pat dry. Place it skin side down on the baking sheet. Sprinkle remaining garlic lemon juice, garlic and salt and pepper
  5. Bake 10 to 15 minutes, or until center is slightly opaque. Serve with yogurt sauce and enjoy!
